UNION CITY, IND. — People walk into Ghyslain Chocolatier in Union City, Ind., and their eyes fall on the display case of beautiful chocolates — a chocolate treasure chest spilling out chocolate starfish, or a perfectly formed lady’s chocolate shoe, or a tray of little caramel-filled chocolate logs shaped like real logs — and they blink, then gaze. And often, all too often for the tastes of chef Ghyslain Maurais, they say the same thing: “It’s too pretty to eat."
