Florida's 2021-22 stone crab claw harvest season began Friday and is to continue until May 1, 2022. Stone crabs are a renewable resource. Legal-sized claws are harvested and the crab is returned to the water to grow new appendages. The Florida Keys and adjacent waters stretching into the Gulf of Mexico produce about half of the state's harvest of approximately 2 million pounds each year.
